Japanese food has taken the world by storm in recent years, boosting the popularity of sake overseas. But in many countries, people don't realize that sake pairs beautifully with all kinds of food – not just Japanese. This is the real charm of sake, which is not fully known yet.

There are barriers such as not being able to read Japanese, not knowing what food to pair it with, or finding the necessary knowledge too complicated. As a result, many people are interested in sake but don't try it.

To solve these problems, "THE GATE" was created. It's an easy way for anyone to enjoy sake with food, like a "door to a great dining experience". You don't need any special knowledge to enjoy it, but it's good enough to satisfy experts. It matches the deep quality of the best wines.

OFFERING

"THE GATE" is a completely new type of sake. It wasn't created based on the producer's idea of what the product should be. Instead, it was created from the drinker's point of view, asking, "What kind of sake would a food lover want on their table?"

It's a special collaboration between Xavier Thuizat, the "2022 Best Sommelier of France" and winner of the "French National Best Craftsman Award", and Hideharu Ohta, the 10th generation head of Daishichi Sake Brewery. Takanobu Sato, the master brewer at Daishichi Sake Brewery and "Contemporary Master Craftsman" of the traditional "Kimoto" brewing method, produced various types of sake. These were then blended with the idea of pairing them with food from different countries. That's how "THE GATE" was born.

The sake used for blending is made from the finest sake rice (Yamada Nishiki and Gohyakumangoku), carefully grown in famous regions such as Hyogo and Toyama prefectures, along with pure groundwater from Mt. Adatara. It is handcrafted using the traditional "kimoto" method, combining several base sakes, from junmai sake to premium junmai daiginjo sake obtained by natural drip. This blend combines the fresh taste of new sake with the complex flavors of aged sake. It also has the elegant richness and depth of flavor that is unique to Daishichi's kimoto brewing. The result is a perfectly balanced, exceptional sake.

THE GATE" is a versatile sake that pairs well with French, Italian, Thai, Chinese, Peruvian and, of course, Japanese cuisine.

Its flavor is complex and balanced, with elegant acidity, a hint of spice, a white flowery aroma, and a dry, mineral finish.

Xavier Thuizat suggests serving it chilled, at room temperature or slightly warm, and using different shapes of wine glasses to enjoy its many facets.
