MEMO By uniquely combining fine, high-grade buckwheat flour from Hokkaido, obtained by stone mortar, we offer soba with none of the peculiar taste of buckwheat, easy to eat and without roughness. For the soup stock for cold soba dip sauce, we use thick shavings of two year aged high-quality katsuo-bushi, resulting in very special bonito flakes. For warm soba soup, the best mixed thick shavings are used, resulting in a very deep tasting soup stock.
