MEMO Eight years ago opened in Urawa, Saitama, before moving to Naha. The buckwheat flour is Nihachi soba from Hokkaido. It is a chewy type of noodle. The soup is made with dashi containing dried bonito flakes and a mixture of soy sauce, sugar and mirin.
